But first, let’s go back to the ancient Greeks and Romans, who helped elevate the bay leaf to legendary status. According to Greek mythology, the nymph Daphne was transformed into a bay tree by her father to protect her from the overly eager hands of the god Apollo. Grief-stricken, Apollo declared the bay tree sacred and wore a bay wreath on his head. This is why winners of the Olympic Games, which were held in honor of Apollo, were awarded a laurel wreath.
The Romans, like the Greeks, associated the bay leaf with invincibility. Roman emperors would wear a bay leaf crown during their victory parades, which is also the origin of the words “laureate” and “laurel wreath.” The Romans even believed that bay leaves could protect them from lightning strikes. They eventually found it in the southwestern corner of North Brabant, at Gova BV, a family business that cultivates bay trees organically for ornamental purposes. During pruning, bay leaves are naturally removed. While these leaves used to end up on the compost heap, they are now distilled into bay leaf oil. Klepper & Klepper used this pure bay leaf oil to create The Best Bay Leaf Licorice Ever.
